Chili


  • 1 lb ground beef
  • 2 large white onions, chopped
  • 1 large can crushed tomatoes 
  • 1 can kidney beans
  • Cumin
  • Chili powder 
  • 2 tbs sugar
  1. Brown beef in dutch oven with a little oil. Season with salt, pepper chili and cumin
  2. Remove beef with slotted spoon, drain off excess fat and cook onions til translucent 
  3. Return beef to Dutch oven and add tomatoes, sugar, and beans and season with salt, pepper, chili, and cumin 
  4. Let simmer for an hour 
Notes

  • I should measure the spices more accurately 
  • I think I have tended to add 2 cans of beans per can of tomatoes

Brisket broth or brisket noodle soup

  Sprinkle 2 lb brisket with 4 tsp kosher salt and pepper  Heat dutch oven on medium high heat and add  2 Tbsp oil Once the oil is hot add 2 Tbsp minced fresh ginger 2 Tbsp minced garlic When fragrant, (fast, like 30 seconds !) add 2 whole star anise 1 cinnamon stick 1.5 Tbsp. brown sugar or agave  2 Tbsp. rice vinegar  2 Tbsp soy sauce the prepared brisket, above  Stir all that around for a few minutes and add  10 Cups water 1 Tbsp. hondashi at least 2 Tbsp gochujang i think its good to add some mild and some hot and you can add more if you taste. I want lots of flavor more than lots of heat You can also skip browning, put everything but meat into pot and taste for salt and then boil away. I like the garlic and ginger in the soup so if I was sauteing it first i would probably add raw after the water is in. Sushi rice (instant pot)

Ingredients 2 cups short-grain Japanese rice 2 cups water 1/4 cup white wine vinegar 1/4 cup seasoned rice vinegar 1 1/2 tsp. salt 2 Tbsp. sugar Instructions In a fine mesh strainer - Rinse rice under running water for about 2 minutes, Then let dry for a few minutes. Add rice and water to Instant Pot and use rice setting - low pressure for 12 minutes. Once cook time is complete, allow pressure to naturally release - about 10 minutes. Meanwhile, in a small bowl - combine white wine vinegar, rice wine vinegar, salt, and sugar. Microwave for 1 minute, then stir until completely dissolved. Transfer rice to glass dish. Then using a wooden spoon, add vinegar mixture and gently mix well to combine.
