Soak overnight
- 12 oz dried hominy
The next day in a large pot combine
- Soaked hominy
- 1 large onion, peeled
- 1 bay leaf
- 6 peppercorns
- 1 tbs salt
- 6 cups water
Take
- 1.5 lb pork (maybe butt and belly), cut into 1/2 inch cubes
- 1/2 tbs salt
- 1/2 tbs cumin
- 3 garlic cloves, minced
Meanwhile make Chile Puree
toast in pan or oven (lightly, don't blister)
- 2oz dried chilies (ie New Mexico or ancho)
Assembly
Remove onions and bay leaf from pot and discard
Add chili puree to pot, let simmer for another 1/2 hour.
Possible garnishes:
- avocado
- cilantro
- lime wedges
- raw onion
- radishes
