- I tweaked this apple pecan muffin recipe to make a cake and I liked it but I would like to have more pecans. Like maybe 1 cup ground and another half cup plus rough chopped and toasted?. Also it fell in dramatically in the middle. Apple-Honey-Pecan Muffins

Maybe I should adapt something like: French Apple Cake
This is an adaptation of the muffin recipe, but not what i did
- Grind in food processor to a fine meal
- ⅔ cup (75 g) pecans
- then toast in a dry pan until aeromatic wipe out pan and add
- 2 Tbsp butter
- 2 pealed, cored chopped firm apples (Pink lady, etc)
- drizzle with
- 2 Tbsp Honey
- and cook until apples have softened and are glazed with honey
- Whisk together the pecans from above along with
- 1 1/4 cup (100 g) all-purpose flour
- 1½ tsp. baking powder
- ¼ tsp. baking soda
- ½ tsp. kosher salt
- beat together
- 2 large eggs, room temperature
- ¾ cup (150 g) granulated sugar
- until mixture is trippled in volume 8 minutes
- fold in
- ¾ cup plus 2 Tbsp. extra-virgin olive oil
- ½ cup buttermilk
- combine wet and dry ingredants and add the apples and
- 1/2 cup rough cut pecans
