Very good sauteed the next day
- 1/4 lb slab bacon, rind trimmed away
- 12 cups spinach
- 12 white mushrooms cut into 1/4 inch slices
- 1 recipe curry vinaigrette
- Preheat oven to 400, cut bacon into 1/4 inch slabs
- Lay bacon on roasting rack in a roasting pan and bake until brown and crispy. Keep warm.
- I'm not sure about this because don't you want to cook the bacon in the rendered fat?
- stem spinach leaves and wash spinach
- In a salad bowl combine everything, add salt and pepper and serve
